The Hedgerow

The Hedgerow with apple cider vinegar (ACV) is a refreshing drink made with Live Original ACV.

Ingedients

  • 100g blueberries

  • 100g blackberries

  • 100g raspberries

  • 3 sprigs rosemary

  • 150g caster sugar (add up to 50g more for a sweeter taste)

  • 150ml Willy’s Original Apple Cider Vinegar

  • 50ml water

Method

In a saucepan, heat sugar and water over medium heat until sugar dissolves.

Add rosemary and all berries. Gently crush with a masher.

Simmer gently until mixture becomes sticky and jammy.

Stir in Willy’s ACV and cook for 2 minutes.

Taste for sweetness — add more sugar if needed.

Leave to cool for 2 hours, then steep overnight for best flavour.

Strain through a muslin-lined sieve without pressing.

Save the leftover berry pulp for ice cream or toast.

Store syrup in a sterilised jar in the fridge for up to 1 month.

To serve as a cocktail: Add 4–5 tbsp syrup to a glass with a handful of crushed ice and a few fresh berries. Top with tonic or lemonade, garnish with extra berries, and enjoy.
