Crispy New Potatoes with Probiotic Eureka Chimichurri
Golden, oven-roasted crushed new potatoes topped with a vibrant chimichurri made with probiotic-rich apple cider vinegar, fresh herbs, garlic and extra virgin olive oil.

500g New Potatoes

1 tbsp Sea Salt

200g Fresh Parsley

2 tbsp Dried Oregano

1 Red Chilli, diced

2 Garlic Cloves, Minced

½ tsp Sea Salt

¼ tsp Black Pepper

2 tbsp Willy’s Eureka ACV

4 tbsp Willy’s Extra Virgin Olive Oil
Method
Preheat the oven to 180c.
Place the potatoes on a large baking tray and drizzle with oil. Place in the oven for 45 minutes.
In a bowl mix the parsley, oregano, garlic, chilli, salt and pepper.
Stir in the Eureka ACV and olive oil.
Let sit for 15 minutes.
Spoon generously over the warm potatoes.
