Eureka ACV Marinated Tofu Poke Bowl

Golden caramelised tofu marinated in Willy’s Eureka ACV, served over fluffy rice with creamy avocado and vibrant probiotic quick pickles. A nourishing bowl packed with bold flavour and gut-loving probiotic goodness.

Eureka ACV Marinated Tofu Poke Bowl

Ingedients

  • Marinated Tofu

  • 400g firm tofu, cubed

  • 1 ½ tbsp Willy’s Eureka ACV

  • 1 tbsp Honey

  • 1 tbsp Olive Oil

  • 1 Garlic Clove, minced

  • Quick Pickles

  • 2 Radishes Sliced

  • ¼ Cucumber Roughly Chopped

  • 1 Carrot, ribboned

  • 2 tbsp Willy’s Eureka ACV

  • Pinch Salt

  • Pinch Chilli Flakes

  • To Serve

  • 450g Cooked Rice

  • 1 Avocado, sliced

  • Fresh coriander

Method

Toss the radish, cucumber and carrot in a bowl with Eureka, chilli and salt. Leave for 10 minutes.

In a bowl stir together Eureka ACV, olive oil, honey, garlic and the cubed tofu.

Heat a frying pan and add the tofu. Fry until golden and caramelised.

Build bowls: add rice, tofu and pickles in a bowl and top with coriander.
