Fluffy ACV Pancakes

Ingedients

  • Ingredients - Pancake Mix
  • 2 tbsp Willy’s Apple Cider Vinegar

  • 180ml milk

  • 125g plain flour

  • 1 tsp baking powder

  • ½ tsp bicarbonate of soda

  • 1 tsp ground cinnamon

  • 1 egg

  • Butter, for cooking

  • Ingredients - Toppings
  • 2 figs, sliced

  • A handful of blueberries

  • A handful of crushed walnuts

  • 2 tbsp maple syrup

  • 1 tbsp crème fraîche

Method

In a small bowl, mix the milk with Willy’s ACV and leave to sit for 5–10 minutes to curdle slightly.

In a large bowl, combine the flour, baking powder, bicarbonate of soda, cinnamon and egg.

Pour in the milk and ACV mixture, stir until just combined, then let it stand at room temperature for 15 minutes (do not stir again).

Heat a non-stick pan or griddle over medium heat and melt a little butter.

Pour about 60ml (¼ cup) of batter into the pan for each pancake.

Cook until bubbles form on the surface, then flip and cook until golden on the underside.

Serve stacked with figs, blueberries, walnuts, maple syrup and a dollop of crème fraîche.
