Halloumi Sun Dried Tomatoes Olive Cous Cous With Lemon Honey Dressing

Ingedients

  • Salad

  • Halloumi, sliced into 1cm thick pieces

  • Sun-dried tomatoes

  • Tomato couscous

  • Olives

  • ½ cucumber, diced

  • Handful fresh parsley

  • Handful mixed seeds

  • Dressing

  • 2 tbsp olive oil

  • 1 tbsp Willy’s Apple Cider Vinegar

  • Juice of 1 lemon

  • 1 tsp honey

  • Pinch of salt

Method

Heat a skillet over medium heat (oil only if not non-stick).

Cook halloumi slices for 1–2 mins per side until golden.

Arrange couscous, cucumber, olives, sun-dried tomatoes, parsley and seeds on a plate.

Add the golden halloumi.

Whisk dressing ingredients together and drizzle over the salad.
