Halloumi, sliced into 1cm thick pieces

Sun-dried tomatoes

Tomato couscous
-
Olives
-
½ cucumber, diced

Handful fresh parsley

Handful mixed seeds

Dressing
-
2 tbsp olive oil
-
1 tbsp Willy’s Apple Cider Vinegar

Juice of 1 lemon
-
1 tsp honey
-
Pinch of salt
Method
Heat a skillet over medium heat (oil only if not non-stick).
Cook halloumi slices for 1–2 mins per side until golden.
Arrange couscous, cucumber, olives, sun-dried tomatoes, parsley and seeds on a plate.
Add the golden halloumi.
Whisk dressing ingredients together and drizzle over the salad.
