Healthy Blueberry Muffins

Ingedients

  • 2 tbsp Willy’s Live Honey Apple Cider Vinegar

  • 240g almond flour

  • 43g arrowroot powder (or tapioca flour)

  • 1 tsp baking soda

  • ½ tsp salt

  • 3 eggs

  • 85g maple syrup

  • 72g coconut oil, melted (or butter)

  • 1 tsp vanilla extract

  • 190g blueberries

  • 1 tsp arrowroot powder (to coat blueberries)

Method

Preheat oven to 175°C and line a muffin tin with 12 cases.

In a bowl, whisk together the almond flour, arrowroot, baking soda, and salt.

In another bowl, whisk eggs, maple syrup, Willy’s Honey ACV, coconut oil, and vanilla until smooth.

Fold the wet mixture into the dry until combined into a thick batter.

Toss the blueberries in 1 tsp arrowroot, then gently fold into the batter.

Divide evenly between muffin cases and bake for 20 minutes, or until a toothpick comes out clean.

Cool on a rack before serving.
