Spring Time Nourish Bowl

Spring Time Nourish Bowl with apple cider vinegar (ACV) is a gut-friendly recipe using Live Original ACV.

Spring Time Nourish Bowl

Ingedients

  • Beetroot Hummus

  • 1 tsp cumin seeds

  • 250g cooked beetroot

  • 400g cooked chickpeas, drained (reserve aquafaba)

  • 1 garlic clove, minced

  • 1 tsp fresh coriander stalks, finely chopped

  • ½ tsp salt

  • 2 tbsp olive oil

  • 1 tbsp Willy’s Original ACV

  • Vinaigrette

  • 1 garlic clove, minced

  • 60ml Willy’s Turmeric ACV

  • 60ml Willy’s Live Apple Balsamic

  • Sea salt flakes

  • Black pepper

  • Nourish Bowl

  • Wholegrain rice, cooked

  • 1 courgette

  • 2 carrots

  • 3 radishes

  • 4 cherry tomatoes

  • 2 spring onions

  • Handful fresh spinach

  • Handful kale

  • 1 medium cooked beetroot

  • 3 tbsp olive oil

  • 60ml Willy’s Live Apple Balsamic

  • 3 tbsp Willy’s Turmeric ACV

  • Sea salt

  • Sunflower seeds

  • Hemp seeds

  • Chia seeds

Method

Beetroot Hummus

Toast cumin seeds in a dry frying pan for 2 mins, set aside.

Blend beetroot, chickpeas, garlic, coriander, olive oil, cumin, and Willy’s ACV until smooth.

Add aquafaba gradually to loosen to your preferred consistency.

Vinaigrette

Whisk garlic, Willy’s Turmeric ACV, Apple Balsamic, salt, and pepper in a jug.

Taste and adjust seasoning. Shake before serving.

Nourish Bowl

Massage kale with olive oil, Willy’s Balsamic, Willy’s Turmeric ACV, and a pinch of salt. Set aside.

Cook wholegrain rice and prep all veg by washing and slicing (peel optional).

Arrange rice and vegetables in a bowl with kale and beetroot hummus.

Sprinkle with sunflower, hemp, and chia seeds.

Drizzle with vinaigrette to serve.
