Sweet Potato Apple And Thyme Soup with apple cider vinegar (ACV) is a gut-friendly recipe using Live Original ACV.

Ingedients

1 large or 2 medium sweet potatoes, peeled and chopped

2 sweet apples (e.g. Pink Lady), cored and chopped

1 white onion, chopped

2 garlic cloves, peeled

2 tbsp olive, coconut, or avocado oil

1 tsp salt, plus extra to taste

6–10 sprigs fresh thyme (or 1 tsp dried thyme)

1 litre bone broth or vegetable stock (room temp or cold)

4 tbsp Willy’s Turmeric & Honey Apple Cider Vinegar

Coconut milk, for topping (optional)
Method
Preheat oven to 200°C and line a baking dish with parchment paper.
Add sweet potato, onion, apple, garlic, and thyme. Drizzle with oil, sprinkle with salt, and toss to coat.
Roast for 30–40 mins until tender and golden.
Transfer vegetables to a blender, add stock and Willy’s ACV, and blend until smooth. (Use caution with hot liquids.)
Return soup to a pot to gently heat through. Adjust salt to taste.
Serve in bowls with a drizzle of coconut milk, if desired.
