Vegan Peanut Butter Noodles

Vegan Peanut Butter Noodles with apple cider vinegar (ACV) are quick, creamy noodles made with Live Original ACV, peanut butter and soy.

Vegan Peanut Butter Noodles

Ingedients

  • 2 tbsp Live Original ACV

  • 1 tbsp Extra Virgin Olive Oil

  • 200g rice noodles

  • 3 tbsp smooth peanut butter

  • 2 tbsp soy sauce or tamari

  • 1 tbsp maple syrup

  • 1 garlic clove, crushed

  • ½ tsp chilli flakes (adjust to taste)

  • Juice of ½ lime

  • Fresh coriander, chopped, to garnish

Method

Cook rice noodles according to pack instructions, then drain.

In a bowl, whisk peanut butter, soy sauce, maple syrup, garlic, chilli flakes, lime juice and Live Original ACV.

Heat Extra Virgin Olive Oil in a pan, add the drained noodles and toss with the sauce until coated.

Serve warm, topped with fresh coriander.
