Willy’s Original ACV Mayonnaise

Willy’s Original Mayonnaise with apple cider vinegar (ACV) is a tangy, gut-friendly dip made with aquafaba, oils and mustard.

Willy’s Original Mayonnaise

Ingedients

  • 1 tsp Willy’s Original Apple Cider Vinegar

  • 60ml Willy’s Olive Oil

  • 3½ tbsp aquafaba (liquid from tinned chickpeas)

  • 1 tbsp lemon juice

  • 120ml organic rapeseed oil

  • 1 tsp Dijon mustard

  • Pinch of salt & freshly cracked black pepper

Method

Combine aquafaba, lemon juice and Willy’s ACV in a bowl and whisk.

Gradually add rapeseed oil, whisking until emulsified.

Add Willy’s Olive Oil, then season with salt and pepper.

For speed, blend all ingredients with a handheld mixer until emulsified.

Store in a glass jar in the fridge for up to one week.
